makes approx. 3 cups
1 cup prunes (dried plums) (see procedure)
1 cup dried apricots (see procedure)
1/3 cup dried cranberries
1/3 cup golden raisins
1-inch long piece fresh ginger, cut into 1/4-inch slices
1 cinnamon stick
1 1/4 cup orange juice
Cut the pitted prunes and apricots in half.
Add those to a small, heavy bottomed stainless steel pot as you go and then add 1/3 cup dried cranberries and 1/3 cup golden raisins.
Then slice about a 1-inch long piece of ginger into 1/4-inch thick slices and add that to the pot and add 1 cinnamon stick, add 1 1/4 cup orange juice and place the pot onto the stovetop.
Tuck the cinnamon stick and ginger down into the mixture and turn the heat to high.....and then adjust the heat so it's gently simmering along for 15 minutes or so.
You'll want to stir that around occasionally as the fruit is cooking down....so that the fruit doesn't stick to the bottom of the pot.
Once most of the orange juice has been absorbed by the fruit, transfer it to a large shallow dish to cool down.
Remove the cinnamon stick and sliced ginger before serving.
Chill in a shallow bowl in the fridge.
Serve with oatmeal and nonfat plain yogurt for breakfast.
Serve slightly warmed with vanilla ice cream for dessert.
